So pretend we got busy with life and forgot to update our blog. And when I say forgot, we had a calendar reminder every Sunday to update our blog that we just kept ignoring. That is the humble honest truth. I now hope, since I'm done with school, to do better and get out a weekly update on our family happenings. Now remember this is more of a journal for Jay and I so if its kind of boring sometimes. . . Well that's just how our life is I guess sometimes.
Since we've last posted not too much has happened other then we both finished the semester alive and somewhat sane.
I graduated! And it was such a great feeling. I graduated from BYU with a Bachelors of Science in Recreation Management and a Minor in Nonprofit Management.
And now we're both just working full time-ish at Audrey's Bear during the summer.
This past week we went on a week long vacation that we have been planning for well over a year. We had been counting down the days and by the time the Friday before we left rolled around we were more then ready to head out both physically and mentally. We were very blessed to both be able to get a week off and to head to California to spend some much needed relaxation time with each other.
We stayed in a little town just out side of Pismo Beach.
There are lots of fun little tourist shops along two main streets by the beach and some have really neat things and others have things that just make you wonder, such as the sweatshirt above. I couldn't help but chuckle a little at their use of the famous jingle.
These cinnamon rolls are to die for!! Every time we mentioned our trip to California these rolls were mentioned. It makes me drool just thinking about them. They are from a little cafe by the beach that makes old fashioned western cinnamon rolls.

We got to go kayaking in the ocean at Pismo Beach and it was by far one of the highlights of our trip. There are caves just north of the beach called Dinosaur caves and we took a guided tour of them. The company was really nice to work with and we looooved our guide, John. In fact he reminded me a lot of what my brother, Bridger, will be like when he's 60+ and retired. John led kayaking tours for fun during the day because he's been retired and loves the ocean and kayaking. Such a cool dude.
The water at Pismo Beach is FREEZING. So they provided us with rash guards, wet-suits, and a wind breaker.

Next on our list of adventures was a visit to one of my favorite little towns, Solvang. Jay served there while on his mission and that's how I learned about it. Its a little Danish town that has lots of fun little shops, restaurants, bakery's, and other Danish nic-nac's. My dad's side has a lot of Danish, hence my maiden name - Henriksen. So it was like going home a little and we loved every second of it.
The Jule House (Christmas house). At this store its Christmas all year round, they even have Christmas music playing!
Abelskiever, some of the yummiest breakfast treats around. Its basically a Danish version of a pancake. At The Red Viking they put this delectable raspberry syrup on it that just makes it even better.
Back at Pismo Beach, the sunsets were absolutely breathtaking and made it really hard for us to leave. I mean, who wouldn't love to be able to have romantic walks along this beach every evening!
This little adventure was one that was both exciting and probably Jay's least favorite at the same time. We went whale watching at Morro Bay, just 30 minutes north of Pismo Beach. We learned that I have sea legs and Jay does not, unfortunately. Poor kid was absolutely miserable the whole trip while I was grinning like a fool every huge wave we hit. But the humpback whales were incredible to see in person. They're massive! And I took great comfort in our captain telling us that they have sensitive skin so they don't "usually" bump up against the boat. Can you even imagine? x_x Humpbacks average between 39-52 feet!
The captain of our "boat" (more like floating 24x24 dock) was a sweet older gentleman with a funny sense of humor and a plastic whale. Which led to the above picture.

Pismo Beach, we didn't want to leave! But we'll be back for sure!
Roadtripping with your best friend is probably the best way to vacation in the world. We had so much fun together and loved making new memories and new friends (mainly seagulls).
Can you tell someone was tired of the car? We both we're going stir crazy by hour 2 of our 9 hour drive. We actually didn't want our vacation to end so much that we made a two day stop in St. George on our way home and visited our friends the Rays. An added day at Sand Hollow was greatly needed and so much fun.
